The grapes of Noe are harvested from the lower part of the plot where the soil is deeper, the vines have more vigour, more freshness and juiciness.

Deep clay-ish, sand and limon topsoil, Micro granite subsoil. De-stemmed and crushed, at beginning of fermentation pumping over keep the cap wet. On skins for approx. 25 days. Vines have been organic for 25 years therefore the yeasts are healthy so fermentation is short. Matured on lees before bottling. No added sulphur.
