Shallow clay-ish,sand and limon topsoil, with a micro granite subsoil, 20 year old vines. Hand harvested. Alcoholic fermentation with indigenous yeasts. De-stemmed. Lightly crushed grapes. 10% Vinified in barrique, the rest in fibre glass. 15 day maceration, basket press, and racking just before the end of fermentation. The pressed juice is blended straight away with the free-run juice, and it’s kept on fine lees in fibre glass until bottling. A little sulphur added on bottling.
